Jean Michel Raynaud of La Renaissance Patisserie; the Sydney Rocks Institution with its amazing patisserie eats and pieshas been inducted into Relais Desserts. Relais Desserts is the world’s most exclusive French Patisserie association and the patisserie equivalent of receiving Michelin Stars. Renowned for the rigorous selection process, chefs are required to be sponsored by two Relais members and assessed by their peers.
Jean Michel and La Renaissance joins the select group which only has 80 members in the world. The venue is also the first patisserie in Australia, and the Southern Hemisphere to achieve this.
Jean Michel created an incredible ‘pièces montées’ inspired by the legendary French chef, Marie Antoine Carême which featured cake tiers covered completely in seamless gold leaf, exquisite piping and hand-shaped, textured flowers. For the signature dessert, Jean Michel utiliseded quintessentially Australian flavours in a gateau of lemon myrtle, aniseed myrtle and Wild hibiscus. The third item is an chocolate bar.
