Dust Bakery Tramsheds Harold Park
Dust Bakery housed at the far right corner of Harold Park Tramsheds is a bit special. With a wholely artisanal approach to their flour, Dust is Cesare Salemi who holds a deeply affirmative ethos regarding bread and nutrition. He mills his own flour onsite using their resident stone mill. In an age of supermarket wonder whites, Dust is a departure with its dedicated focus on milling their own flour using sourced grains. The aim to retain the nutrients that is otherwise lost in the chemical processes associated with commercial flour. Dust then puts their flour through the motions churning out beautiful breads, baked good and pizzas.
A look around Dust. Dust is a bakery, millery, cafe/diner and pizzeria all in one. You’ll spot their wood fired pizza oven to the one side and on the other, their large bread and baked goods counter. In a seperate mill space, you’ll spot bags of gran and their large stone mill. Dust operates breakfast, lunch and dinner hours.

Right out of the wood fired oven here at Dust. The pizza toppings are ample and it sits on a semi-firm pizza base made using their flour. Having picked from two differing ends of the taste spectrum; one a savourier spicy salami cheesy pie and the other a more creamy mellow tasting pork and broccolini topping.
A gorgeous salad featuring chunks of firm but tender beetroot (there’s a variety of types in there) working well with the smooth creamy goat curd.
