Della Hyde Darlinghurst
Bar No.5. The new bar by the Applejack team is now open and its a bit of a surprise; well its the first one that’s an underground bunker bar – and its a luxe pink sexyback sort of grand hotel bar with its ornate columns, throwback detailing (grand mirrors, tricked up backbar) and thick pile carpet. Even the bathroom is a curious mix of pink and greys. Its different enough to pique even the curiosity of the most jaded bar flies. When we popped in DJ was playing a mix of eighties and nineties pop hits – We haven’t heard “Remember the time” by MJ in a long time. Cocktails, bites and light dancing is promised and yup, it happened; Groovers dancing their night away. #lightdancing was promised and there it was.
Pink, Ambers, golds dominate the curiously sexy venue. There’s suspended pendant globes and a clad raw brick look. Bar flies should plonk their hinnes on the far end of their bar as the cocktail service was fast and furious but there’s plenty of seating around the venue with one large booth out the front that can sit about 12-15.
Della Hyde has 2 menus, one that’s sorta locked in (classic drinks, wines, beers) and another with a rotating cocktail list – there’s 6 on there and its meant to cycle and change; seasonal cocktails ftw. If you’ve been to The Butler/Socal/Bondi Hardware or The Botanist, you can expect fun twist on classics from Joe Worth and Lachlan Sturrock. Priced at $18, we got into their peach into peru, rumbo no5 and their version of a pisco twist. The Rumbo No.5 with its song name pun is our pick of their current selection. Classy mini tiki styled rum number was really kinda tasty. 5 year old rum, creme de menthe, pineapple, coconut, falernum, lime, tiki bitters.
Della Hyde also has an Europe and North African menu. This was their pizza. A flavoursome punchy moroccany pizza that sat on a filo-esque base. Light and a perfect bite with drinks. Also on the menu, bar snacks and deep fried lebanese breads with dips.
Della Hyde is all sorta pretty in pink and then some. Its cooler and braver than you’d assume at first glance. Its a very comfortable sort of bar. We’ve always had a great time at Applejack bars and this is one for our roster. We can’t wait to get back in for more goodtimes and yes, #lightdancing.
