Brooklyn Boy Bagels is Michael Shafran and the story behind Brooklyn Boy Bagels is one that resonates – a desire for real NYC bagels in Sydney where there were non that satisfied. The genesis was a weekend home bagel making session (based off research and online recipes) and now a few years in the making, Brooklyn Boy Bagels has moved from popups and markets (they’ll still be selling at markets and various spots around town so fans fear not) into a cafe/kitchen out at Matraville. BBB Matraville is years in the making and we’re not sure if residents in the area knows what a treat this is.
The cafe is a tiny 6 seater, it’s more of a bakery than what you’d normally think a cafe is, in some ways,this is reminiscent of ragamuffin in Leichhardt, Operations take up most of the venue with a hand basin out front and a long built in table. There’s a range of graffiti styled pieces around the venue that lend the space an art hub/street art appeal. Very NYC. We really quite enjoyed watching the bustle happen behind the counter. Michael had a small batch of his pushcart NYC styled pretzels to make (bound for Merivale’s Palmer and Co). The Pretzel are hand made, boiled in a caustic soda/water mix (lye), coated in seeds and baked. The term Artisanal that Brooklyn Boy uses to describes their product sit quite accurate as these were quite hands on. Bit of a masterclass this.
Poppy seeds, carraway, sesame, onion, garlic NYC Pushcart Pretzels before they get baked in the oven. The orange colouring is from the boiling process which also gives the pretzels their crust.
Shweets and Kawfees. We have their cappucinos and they’ve got a NY stencil that was used to created the logo. Nutella and Salted Caramel Babkas $5 ea are a nice afternoon carb attack.
Artisan bagels and schmears are available. This is their bagel with cream cheese schmear with lox (smoked salmon, capers, red onion and dill) $11

Now open, drop in for New York deli rye, Bagels, Jewish challah bread, Babka, New York pushcart pretzels and kawfees (coffees). They’re the best you’ll get in Sydney but get in early, some of the baked treats were already gone by the time we got there around 2pm.
